Product is prepared from the fillets of anchovies (Engraulis encrasicolus), calibrated, washed and cleaned (skins, bones, blood and entrails are removed), matured in salt and reduced in fillets. Once prepared, the anchovies are packed with sunflower oil in glass jars.
