Pan Fried Fillet of Beef
Pan fried fillet of Causeway Prime Beef, served with Pommes Anna, salt baked celeriac puree, wild mushroom ketchup, burnt onion & thyme jus and celeriac crisps.
Method
Gently oil and season the steak.
Add to a hot frying pan, with a little butter and cook to your liking. Medium-rare is best.
Thinly slice peeled potatoes in a bowl and add melted butter, salt and pepper. Layer the slices in a cake tin and bake.
Place celeriac in a salt crust and bake until tender. Chop and add cream, butter, then season and puree.
Sauté mushrooms in butter, then add garlic puree, nutmeg, Worcester sauce and brown sugar. Reduce, then puree.
Caramelise onions until nicely blackened.
Then add to beef stock with thyme and butter, reduce and when thickened, puree.
Thinly slice celeriac and deep fry until crispy.
